| 1. | Wash potatoes and rub skins all over with Olive Oil. |
| 2. | Prick with fork. Bake on oven rack in preheated @ 205°C/400°F. oven for 1½ hrs or until tender. Set aside for about 60 minutes to cool down. |
| 3. | Meanwhile, mix drained tuna with mayonnaise, celery, grated onion, salt, pepper and parsley. |
| 4. | After potatoes have cooled down, cut in half length ways. |
| 5. | Scoop out potato with a table spoon leaving a 1/8 inch thick shell. |
| 6. | Add scooped out potato to tuna mixture. Blend well with several forks, simply by lightly tossing the mixture. |
| 7. | Spoon tuna and potato mixture into potato shell, mounding high. |
| 8. | Top each potato with some grated cheese. |
| 9. | Arrange prepared potatoes back onto a baking dish. |
| 10. | Heat in a 175°C/350°F oven for 10 to 15 minutes. |
| 11. | Serves 8 People. Be warned - they are extremely filling !  |
