Beer-Batter Fish [2]

This Recipe the courtesy of Ken Alexander

Fish Suitable

Shark, Whiting, Garfish, Flathead, Snapper, Mulloway, Trevally, Cod, Coral Trout

Cooking Utensils

Wok or Deep Pan, Metal Tongs, Spatula

Cooking Time

5-10 minutes

Ingredients

  • 1 cup of plain flour
  • A pinch of salt
  • 60gms of melted butter
  • 2 eggs, lightly beaten
  • 1 cup of beer (full strength not light)
  • 1 egg white, stiffly beaten
  • Extra flour as needed

1.Stir flour through butter and eggs.
2.Gradually add beer and stir until smooth.
3.Cover and stand for one hour in a warm place.
4.Just before using, fold in the egg white.
5.Flour fish and coat with batter.
6.Cook in 5 mms of hot extra virgin olive oil for two to four minutes on each side.

The main difference I have noticed between this batter mix and Beer-Batter Fish [1] is the folding of the egg white into the mixture. This supposedly allows for a much lighter batter.
